DeListes name comes from the last name of the owner and head chef Zdravko Listes. We are located in Split, a capital of Dalmatia region, and a second largest city in Croatia.

It is a family oriented business involving several family members in different roles. 

The produce we use in our restaurant mostly come from our family farm located in a small village called Vinovo Gornje, about 45 km from Split, in a pristine and wild Dalmatian Inland area. Everything we grow is organic, and includes potatoes, tomatoes, zucchini, kale, chard, beans, peas, fava beans etc.

We base our menu on seasonal and daily available ingredients.  This means that our menu always changes and reflects the traditional cycle of seasonal based eating. 

We source our fish from the local fish market or directly from local fisherman. The meat products we use also come from local butcher shops and local farms, depending on availability.
